Ethics of Eating – as discussed in the Pacific Northwest

Recently, I attended the first regional “Ethics of Eating” Leadership Training in Region 1. The event took place at Campbell Farm, a 40 acre working farm also used as a retreat center. We flew into Seattle the night before and drove through green, pine covered mountains on our way to the farm. On the other side of those mountains we approached dull, brown mountains. Campbell Farm is in Yakima Valley, WA, a desert on the other side of those barren mountains. I was going to learn many, many things in this desert made fertile with irrigation waters.

We talked to both conventional and organic farmers, employers and employees, and observed the farming practices of the area. Our objective was to discuss the ethics of eating in a world where 1 in 6 people are hungry. We did this by educating ourselves on our own methods of food production and transportation, and exploring the conflict of the abundance of food and empty stomachs.

I’m still sorting through most of the information; however, I want to share with you the 10 things that stand out the most to me from this experience.

 

1)      The farm we stayed on was fairly small and had both an organic and conventional apple orchard. We asked Craig what was the difference between organic and conventional farming. He informed us that organic farmers ‘pull a heck of a lot more weeds.’ Herbicides are not allowed, making for a more labor intensive care of organic fields.

2)      We further questioned the differences between organic and conventional, knowing that pesticides were not used either. He explained that to keep pests away from organic foods they are coated, with fish oil. A vegetarian in the group was quick to question whether or not this information was required to be advertised on organic foods. I’ve never seen an organic food label announcing the use of fish oil, and it’s pretty common practice, along with the massive amounts of bug hormones used to keep moths from mating in organic fields.

3)      One reason the fish oil may not be considered a problem is that produce is rinsed in water and chlorine. While chlorine is not natural, the USDA has decided that it is necessary considering the manure used to fertilize the organic fields.

4)      Developing the composite is a lot of work, especially for organic fields; not only must it sit in the sun for weeks to get to a certain temperature, the manure used must come from organic animals. Ten thousand gallons of water are used on approximately one square mile of compost piled about a foot high. A lot of compost, but that’s a huge amount of water in a desert of all places!

5)      The amount of water used for irrigation is just phenomenal, enough to make a desert a fruitful place! In order to conserve water, some farmers received incentives to begin a ‘drip system,’ where a small hose lines the rows of crops and drips out water, as opposed to being doused by a sprinkler system. This greatly reduces the amount of water used; however, the water table level is greatly reduced as well. This means there is less water in local reservoirs, and more water will be needed out of the Yakima river, lowing river levels for fish, which is what was happening with out the drip system. What a cycle!

6)      You may think your kids are picky eaters, but we all, as consumers, are very picky eaters and because we are spoiled. An incorporated farm that we visited throws out 15,000-20,000 pounds of produce a day. Twenty thousand pounds of fresh food goes to waste every day during harvesting season because consumers like us don’t want to buy a yellow-bottomed cucumber. It doesn’t taste any different; it just grew on the ground the way cucumbers are supposed to grow!

7)      The greatest concern expressed by farmers was over production. Over production in a local and global community where some people do not get enough to eat does not sound like a problem to me. Both big and small farm owners admitted to letting produce rot in the field, which nourishes the soil, and keeps food prices from plummeting by not flooding the markets, however this keeps this food out of the food pantries that would distribute the produce to people in need. Yet another vicious cycle.

8)      Just down the road, Campbell Farms struggles to provide healthy meals to youth in the area whose parents are financially strained when it comes to groceries, buying limited, and often unhealthy, food. While our visit may have opened up the eyes of the incorporated farmer as to how these neighbors can help each other, how often is this happening in other communities, or in my own refrigerator?

9)      These kids who aren’t eating healthy food don’t look as though their not eating. That’s when I recognized the concept of nutritional starvation. Sure these kids eat, but they eat processed, fatty, high in calorie and low in nutrition foods. It’s all their families can afford, or know to eat, even with the abundance of fresh produce all around them.

10)  On top of nutritional concerns, farm workers are 70% more likely to get uterine cancer and 60% more likely to get leukemia. May be genetics, may be working conditions? The number one cause of death among farm workers is suicide.

 

To end on a better note, I’ll share another quick story. On a small 18 acre farm that we visited they were raising organic chickens. The pen they stayed in was a beautiful little piece of land, covered with apple and crab apple trees as well as tall grasses. Off in one corner we noticed a small circle enclosed by some fencing: chicken jail! Apparently, there is such a thing as a cannibalistic chicken; the three housed there ate eggs.

We obviously covered a wide variety of topics, specific to the region, but applicable nationally and globally. Enjoy the food for thought I’ve shared with you, and consider for yourself the “Ethics of Eating.”

Lessons Learned

My Lenten fast from meat ended on Saturday night with the Easter Vigil (Alleluia!). It is one of the only Lenten disciplines I can remember that ended with a strong sense of relief. Relief because I did not have to think so hard any more about what to eat. Relief because my wife and son and I could now eat the same meals for dinner. Relief because I could finish all my son’s uneaten scraps.

When I began the journey, I hoped to use the fast to be in solidarity with those who never get to eat meat and to learn how I could eat less meat. I think that both of these happened to a certain extent.

In general, I found that I was hungry more often (carbs and greens don’t burn as long) and therefore ate more frequently (even breakfast!). I was pretty intentional to offer prayers for those who are truly hungry when I felt mild tinges of hunger.

As to finding new ways to eat less meat, echoing what Nancy wrote earlier, I was struck by how difficult it is in our culture to avoid meat. It was particularly hard when I was traveling–my usual meal was some form of a salad or pasta with red sauce. I also wasted so much more food–veggies just don’t keep as long as meat.

But I think the biggest lesson for me was how privileged I am. When I was hungry, I would eat more. When I bought the wrong veggie, I could buy a different one. When my veggies went bad in the fridge, I would toss them out and go to the store. Even that I could at the end of forty days (+ Sundays) I could simply choose to eat something else. And I felt relief that I could just move on. In this way, instead of feeling a sense of solidarity with those who are hungry, I realized my great distance from them. I realized that I still have much to learn about walking with people who are poor and vulnerable.

Last Friday’s Dinner

As I noted in an earlier post, in this Lenten discipline I’ve been struck by how much power and privilege I have. Friday’s dinner (actually it was Monday’s) again underscored how this fast is a choice, and not necessarily the best one (I’ll say more about that in a bit).
So, to recap, I thumbed through the Food for Life cookbook put out by LWF and found a recipe for a dish from Sudan called Bamia. I picked the dish because it looked relatively quick and easy and I liked the idea of eating in solidarity with the Sudanese. Great idea, right?

I called the local Whole Foods to see if they sold okra, the key ingredient. They told me that they had just received a shipment, but that it arrived in bad shape so they just threw it all away. Problem one: okra does not grow in northern Illinois in the winter (does it ever?) so it was probably flown in from South America or something, thus violating a major rule of eating locally. Problem two: I am participating in the industrial food complex, and the okra I was seeking fell victim. How much of the vegetable had the Whole Foods received from who knows where before they promptly tossed it out?

I was not to be deterred, so I called the next closest Whole Foods, and apparently their shipment had received better care. They held two pounds of okra for me and I picked it up on my way home from work.

The recipe called for one kilogram of okra. That’s a lot of okra. As I began preparing the dish, I realized I had way too much (I think the recipe should call for one pound). So I only cooked half of what I had purchased. Problem three: I bought way too much of an exotic (at least to me) vegetable than I could ever use.

As I was cutting the okra, I realized that Bamia was probably not a dish for me. Being somewhat of a rookie vegetarian, I had never eaten okra before. I did not know that it was so, well… slimy (maybe that’s why it’s fried in the south?). So I began cooking as directed and the dish only got slimier and slimier.

img_2419-754623 I continued cooking until the dish was ready. I served with rice as suggested and attempted to eat in solidarity with the Sudanese. The dish was rather bland (and, in case you forgot, slimy). I choked down as many bites as I could, all the while trying to remember those who have fewer food choices (or no choices at all). Which leads me to problem four: I could not eat all the food that I had prepared.

To summarize the waste: one Whole Foods store simply tossed a whole shipment of okra, I purchased too much okra, and I could not finish the okra I had prepared. That’s a whole lot of waste for a small dish that I could not finish (because I knew that I had other food choices).

Which brings me to my reflection on intentional living. I am a big fan of living purposefully, especially when it will be to the benefit of those who are poor and hungry. In some ways, this one experience underscores for me how careful we must be when we are making our food choices: even ostensibly good choices can have negative ramifications, especially when they are not completely thought through.

On a related note, my meat fast has led to another conflict in my eating habits–I used to finish whatever my son would not eat because I hate wasting food. Because I am not eating meat through Lent but my son is, I have thrown away more food in the last two weeks than I am comfortable with.

So what to do? I will continue with the fast (mostly because I like to finish what I start and I do think that some good reflection and experiences are coming from it), but I will be much more thoughtful about how I carry it out. And I’m pretty sure I won’t have any more okra.

Our Lenten Fast

Just about everyone on the World Hunger team has decided to abstain from meat on Wednesdays and Fridays through Lent. I think I’m personally going to give up meat for the whole of Lent (Mary, are you still up for it?). I am actually very excited about it–we will use the fast as an opportunity to be in solidarity with those who never eat meat, we will explore ways in which we can consume less meat more regularly, and we will be able to share recipes and experiences, some of which will find their way onto the blog. (FYI, some of us will be using the new LWF cookbook, Food for Life, to help us with recipes.)

When I’ve told people of my plans, I’ve seen several reactions. Since fasting can be in some ways a foreign discipline to our consumer driven culture, I thought I would briefly share what has (and what has not) motivated me to give up meat for Lent.

First, I find that fasts break up the routine. In so doing, they help me to live more intentionally, to be more present. For example, in the coming weeks when I find myself wanting a hamburger, I will use that opportunity to remember those who are hungry, to offer prayers that they be filled, and to remember my own dependence on God.
Second, I think that how we live our lives matters. It is great to give money to help in the fight against hunger (and your gifts in the current economic climate matter more than ever). That said, we also need to strive to live our lives in ways that do not exacerbate global hunger. I have spoken on this blog about the ways in which over consumption of meat in the U.S. impacts the availability of food. I see this as a way to explore in my own life how I can eat less meat (honestly, I’ve never tried to go meatless and I’m not sure how I will go about it–I better start researching!).
Third, this is not about piety. My colleague Rodger Prois reminded me of the Small Catechism, where Luther reminds Christians that “Fasting and bodily preparation are in fact a fine external discipline, but a person who has faith in these words, ‘given for you’ and ‘shed for you for the forgiveness of sin,’ is really worthy and well prepared.” A fast then is not a way to find particular favor with God or to gain some spiritual authority that can be wielded over less committed persons of faith.

From the length of this post (and its meanderings), I suspect you can tell that I’m still working to articulate my ideas on the whole thing. I welcome your feedback and comments.

Back to Beef

I just read an interesting report from the Global Policy Forum that makes important connections between food and finance. One little factoid that struck me: more than half of U.S. grain and nearly 40% of world grain is being used to feed livestock. The author of the report cites a 1997 news release from a Cornell ecologist who suggests that the U.S. could feed 800 million people with the grain that livestock eat. Granted, not all the grain that cattle eat is suitable for human consumption (thank you Mark Goetz for pointing that out to me), but again this underscores for me how lowering our own meat consumption could be an effective way to lower food costs and perhaps improve food distribution (to say nothing of the amazing environmental benefits of consuming less meat).

On a related note, Lent is just nine days away (and yes, as you may have already guessed, it is my favorite church season). One way to experiment with consuming less meat would be to practice the ancient and venerable tradition of abstaining from meat on Fridays (and Wednesdays if you wish!) for the six weeks of Lent. Or if you’re adventurous, you could fast from meat for the whole 40 days. I am tempted to do just that, and I would probably succumb to peer pressure if I heard from enough people who would join me…

Is Anything Molding in Your Refrigerator?

A few weeks ago, I wrote a post about how much food is wasted because we supermarket shoppers prefer “attractive” produce. Ugly, misshapen, blemished produce doesn’t even make it in the doors of most large grocery stores. In fact, it often doesn’t make it out of the field! Not having been previously aware of the scope of this type of food loss, I had lots of questions about it.

So I was quite delighted to read this post from the Sierra Club on the same topic. It includes lots of great links to related information. In particular was a link to this report from the USDA’s Economic Research Service about food loss in the United States. It explains so much! Admittedly, some of their data is quite old, and the report itself is from January 2007. But even so, even adjusting for the possibility that the numbers have improved, much of what the report describes is still valid. It explains, in very understandable language, how both edible and inedible food is lost at each step of the food chain, beginning with the farm and ending with us throwing away moldy leftovers from our refrigerators.

A few statistics that caught my attention in the report:

“…about 96 billion pounds of food, or 27 percent of the 356 billion
pounds of the edible food available for human consumption in the United States,
were lost to human use… in 1995.” (pg. 3)

“If even 5 percent of the 96 billion pounds were recovered, that quantity
would represent the equivalent of a day’s food for each of 4 million people.”
(pg. 3)

“From foods forgotten and spoiled in the refrigerator to the uneaten
vegetables tossed in the garbage, consumer and foodservice food waste is the
single largest source of food loss in the marketing chain. Estimated at 91
billion pounds, this food loss accounted for 26 percent of the edible food
available for human consumption in 1995.” (pg. 6)

What astounding statistics! 91 of the 96 billion pounds of food lost each year in the United States is lost during and after it is prepared for eating! If those figures are accurate, imperfect produce is a significantly smaller problem then the food we leave on our plates at restaurants, the uneaten salad bar items, and the food we purchased with good intentions but failed to cook before it went bad.

It seems so recoverable! (See second statistic above.) It feels like something each of us could really act on. What would happen if we all started buying only what we could realistically prepare and eat in a given time period? What if, instead of leaving half our “supersized” meal on the plate at the restaurant, we took it home – and then actually ate the leftovers rather than just throwing them away a week later? Think of how many people the “extra” food we don’t buy or throw away could feed! And as a side benefit, think how much money would we save if we bought only what we actually ate!

I understand that this topic is really much more complex. There are many, many issues surrounding it, not the least of which is how this “extra” food would even get to the people who need it. But still. I love the closeness of these numbers. It’s not only what some distant farmer is deciding about his crops. It’s about what I’m doing with the food in my refrigerator, and what I’m doing at the restaurant on Friday night. It illustrates that my daily life is part of both the cause and solution of ensuring everyone can eat. And in that, I find power and a great source of hope.

Consumerism and the Fall Through Christmas Seasons

As in my previous post this week, I’m still thinking about consumerism. My daughter is already asking for things for Christmas (the catalogs have begun arriving). And she loves practically everything she sees having to do with Halloween. Of course, Halloween things will be forgotten by Christmas and we certainly don’t need any of it. But that’s hard for a child to grasp while looking at all the glittery, cool stuff. It can be hard for adults, too.

So I found the following article helpful in this year’s copy of Who’s Birthday Is It, Anyway? from Alternatives for Simple Living. The Best Gift I Didn’t Get

As Christmas approaches, I know I will be asked, “What do you want for Christmas?” Now, if I think about it, and look around on the Internet, check out magazines and catalogs, and window-shop at the mall, I am sure to come up with a long list of things that I really want. Most of which I probably didn’t even know exist until I started looking for things to “want.”

So last year, before the question was asked, I did a little soul-searching. And the truth that I found was this – I didn’t really want anything. On top of that, there wasn’t anything I needed either. So, this was my answer to the “What do you want for Christmas?” question. “I want you to take the money you were going to spend on me and find someone who truly has a need. I want you to help that person, and then on Christmas, tell me what you did. That will be my gift.” The more people I told, the more I meant it and looked forward to seeing what I “got.”

This is what I “received” – $50 donated to Habitat for Humanity, $20 given to a homeless woman looking in a dumpster for food, towing service paid for a stranger whose car had left them stranded, Christmas gifts provided for a Salvation Army Angel Tree, and a yearly gift made in the form of a monthly pledge to the ASPCA, a group dedicated to ending cruelty to animals.

Not everyone heeded my wishes; I still received some “real” gifts. But the funny thing is, I was more excited with what I didn’t get. I can truly say I was filled with joy, knowing that others have been blessed. I guess I had a small glimpse of what Jesus must feel when we do the thing He wants us to do.

I know that even as adults we can get caught up in the excitement of getting gifts at Christmas. I’ll admit it’s fun to get a present. But really, do any of those things bring lasting happiness and joy? If the truth be known, I bet most of us can’t even remember what gifts we received for Christmas last year. So what do you have to lose? Just give it a try. I bet you’ll find a whole new meaning in the season.

This year, I am praying earnestly that I receive nothing. After all, my Heavenly Father has already given me everything I need.

What’s in YOUR Basement?

Say what you will about capitalism, it has its place! If there’s a demand, a supplier will appear. And the latest business I’ve run across is so perfectly American that I can’t help but admire it, although it makes me cringe a little at the same time. Pehaps you’ve heard of it: 1-800-Got-Junk.

This is a business that exists because we’ve got too much stuff and no time (or desire) to deal with it. Some nice, uniformed employees will come to your house and haul away a whole truckload of stuff you don’t want for a little over $500 (here in Chicago; pricing varies by location). Plus they recycle or donate some 60% of what they take away, and they’ll sweep up the place after they’ve emptied it out.

I so enjoy the irony. We work long hours to earn money to buy stuff, and then we pay people to come take it away, all the while complaining that we don’t have enough time or money! And it’s not just one or two of us; the company expects to earn around $150 million in revenue this year.

In the time that I’ve worked for ELCA World Hunger I’ve become much more aware of what I buy and what I waste. Here’s to hoping that once the truck leaves my house and I have a cleanly-swept floor, I won’t set to work filling it again.

Story of Stuff

This may be another one that falls into the category of, “yeah, already seen it.” It isn’t cutting edge new. But it’s very worthwhile! In case you haven’t seen it, or if you’d like a refresher course on how our consumption affects our planet and the people on it, please watch Story of Stuff. It’s 20 minutes and 40 seconds of your life well spent – and entertaining, besides! It’s the simplest, clearest explanation I’ve encountered about where all of our “stuff” comes from, where it ends up, and why it matters.

It’s also a partial answer to my posting on the Nature of Power, my question about what it means for an individual American to wield American power. (Though it applies to other countries, too.) At the time I wrote that post, I was thinking more about government. But Story of Stuff makes crystal clear how each of us affects the world – and ultimately world hunger – with our purchase decisions every day. Instant empowerment!
